Yummy New Recipe
Craig subscribed me to Every Day with Rachel Ray (mind you, I didn't protest MUCH). He saw a copy in our dentist's waiting area and thought the food looked delicious.
I've been trying a few of the recipes in her magazine here and there and I've been pleasantly surprised. My favorite so far, though, has been the Chicken Salsa Soup. It took less than an hour to make last night (30 minutes of which was just letting the thing COOK).
Something with this pregnancy has had me on the hunt for a chicken tortilla-style soup recipe and this one fits the bill. Easy to make. Not a ton of prep. YUMMY (most important, of course).
A couple of notes:
1) If you don't have a dutch oven (I don't), just simmer the soup for 30 minutes after you add the salsa.
2) I didn't have the patience to make her Salsa Fresca recipe first, so I just used prepared salsa from the grocery store. I chose the Pace specialty Pico de Gallo for this recipe and it turned out great (but it wouldn't be a top choice to eat with chips).
