I've been trying a few of the recipes in her magazine here and there and I've been pleasantly surprised. My favorite so far, though, has been the Chicken Salsa Soup. It took less than an hour to make last night (30 minutes of which was just letting the thing COOK).

Something with this pregnancy has had me on the hunt for a chicken tortilla-style soup recipe and this one fits the bill. Easy to make. Not a ton of prep. YUMMY (most important, of course).

A couple of notes:
1) If you don't have a dutch oven (I don't), just simmer the soup for 30 minutes after you add the salsa.
2) I didn't have the patience to make her Salsa Fresca recipe first, so I just used prepared salsa from the grocery store. I chose the Pace specialty Pico de Gallo for this recipe and it turned out great (but it wouldn't be a top choice to eat with chips).

A restaurant we like to eat at has a fantastic tortilla soup (and such a great Cuban sandwich, I have never ordered anything but). The recipe for the tortilla soup makes up a giant mural on one wall and calls for 8 gallons of onions and 24 HEADS of garlic.
Now that you got me thinking about it, do you think the man would take me out to dinner tonight?
